Which Cocktails to Shake and which ones to Stir?

Shaking or Stirring depends on the level of dilution and texture the cocktail requires.
As a rule of thumb, cocktails made with spirits, tonics and bitters should be stirred and stirring results in a smooth mouth feel with precise dilution of the spirits and liqueurs without melting the ice too much or making the cocktail cold and bland.
While cocktails that feature fruit juices, egg whites, cream or cream based liqueurs, should be shaken. Shaking in a cocktail shaker with ice beats it into a smooth texture before straining into a glass.

Mix Vodka, orange juice, sherry, orgeat syrup and ice in a cocktail shaker. Shake well and strain into chilled wine glass. Garnish with dash of bitters. (Cocktail created by Eben Freeman)

  • Ciroc Vodka

    Note that these days there are flavoured Vodka available in the market too, and some cocktails do make use of them.

  • Palo Cortado Sherry

    Sherry is a fortified wine of Spanish origin. This is a fortified wine made from the white palomino grapes that grow near the city of Jerez de la Frontera in Andalusia, Spain. The name Sherry is the anglicisation of Xérès (Jerez).

    Sherry is produced in several styles including light sherries like Manzanilla and fino, similar to white table wines, and darker and heavier wines such as Amontillado and oloroso, that are allowed to oxidise as they age in barrels.

    Sherry is fortified with grape spirit after the fermentation is complete, where as Port, a similar wine from Portugal is fortified half way through the fermentation which stops further fermentation of sugar into alcohol. Thus, Port is sweeter and Sherry is usually Dry and sweetness if any is added later.

    So, Dry Sherry is essentially the wine which has completed fermentation and has little to no sugar from the grapes left in it.

    There are naturally sweet Sherry too, Moscatel, made from the grapes by the same name and they are produced like Port, that is, fermentation is stopped mid way, and there is Pedro Ximénez too.

  • Orgeat Syrup

    Orgeat syrup is a sweet syrup made from almonds, sugar and rose or orange flower water. It has a dominant almond taste and is used to flavour many cocktails. It could be used in the absence of Amaretto liqueur to impart the nutty flavour to your cocktail.

  • Of Peychaud Bitters

    Alcoholic spirits infused with botanicals such as herbs, roots, fruits and leaves, are called Bitters.
    Bitters consist of water and alcohol which has been steeped with various herbs, fruits, leaves etc. Bitters are not to be drank neat or even as the base spirit of a cocktail, these are usually concentrated alcoholic concoctions and just a dash or a few drops are all we need to add that taste to a cocktail.
    There are exceptions and some bitters like the Italian Amari is consumed without mixing in a cocktail. It has a bitter sweet taste and alcohol content is somewhere between 16%-40%. Generally in Europe its being consumed as an after dinner digestif.
