Cognac
Cognac is a geographically specific Brandy, named after the commune Cognac, France. Cognac is a commune in the Charente department in the south-west of France.
Cognac production is regulated by the French Appellation d'origine with specific methods of production and specific grapes from designated regions to be used to meet the legal requirement to be declared a Cognac.
Methods include a double distillation in copper pot stills and aged at least two years in French oak barrels from Limousin or Troncais. Cognac is also an eau de vie.
Cognac has a fascinating history and it's association with Napoleon Bonaparte, specifically the Emperor's association with the Courvoisier cognac has made Cognac one of the most celebrated and sought after alcoholic beverage ever.
Napoleon Bonaparte visited Bercy in 1811 as documented in a historic painting by Etienne Bouhot and later was credited with saying he wanted his artillery companies to have a ration of cognac during the Napoleonic Wars - Wikipedia
The current legally defined categories of Cognac are
V.S.: Eau de vies with a minimum age of two years. Also known as Very Special or Three Stars.
V.S.O.P.: Eau de vies with a minimum age of four years. Also known as Very Special Old Pale or Reserve.
X.O.: Eau de vies with a minimum age of six years
Cointreau Orange Liqueur
Orange Liqueur is the generic name for orange fruit based liqueurs, there are two traditions of orange liqueur, Triple Sec and Curacao, two major brands being Cointreau from the Triple Sec tradition and Grand Marnier from the Curacao tradition.
Calvados Brandy
Calvados is a cider brandy from Normandy, France. Calvados is distilled from cider made from specially grown and selected apples, from over 200 named varieties. The fruit is harvested and pressed into a juice that is fermented into a dry cider. It is then distilled into eau de vie. After two years of aging in oak casks, it can be sold as calvados. The longer it is aged, the smoother the drink becomes. Usually, the maturation goes on for several years.
Calvados is different from a Hard Cider which is popular in the British Isles.
a Hard Cider is a bubbly low alcohol beverage that is often mistaken for a beer for it's carbonated nature and is not even a wine since it's fermentatation is not complete and thus it's less alcoholic and mildly sweet (since apple doesn't contain as much sugar as grapes even the semi-fermented beverage doesn't contain as much leftover sugar as a wine at s similar stage would have ) whereas a Calvados is produced by distilling a cider.
"Calvados is the regimental drink of The Queen's Own Rifles of Canada, The Royal Regina Rifles, The Royal Canadian Hussars, Le Régiment de Hull, Le Régiment de Maisonneuve, and The Sherbrooke Hussars. The troops were gifted with Calvados as the units passed through Normandy following the D-Day invasion." - WikipediaPernod Licorice Liqueur
Pernod Anise is an anise flavoured liqueur invented in France in 1920, after Absinthe was banned in 1915. Pernod is made from distillates of star anise and fennel blended with distillates of 14 herbs including chamomile, coriander and veronica.
Note that Pernod is positioned somewhere in between Anisette and Pastis, since it has Liquorice but it has less Liquorice influence than Pastis.
