How do I flame citrus peels without setting them on fire?
MORETo avoid flames engulfing the peel, ensure it is held at a safe distance from the flame. Express the oils over the flame briefly and with a quick motion. The goal is to release the oils, not to set the peel ablaze.

Add rum to empty glass. Bacardi Gold was used in mine. Top with Monster Original. Ice is optional. The sweetness of the Monster should not mask the slight kick of the alcohol, and the kick of the alcohol should not overpower the Monster. Otherwise, use 1 part rum to 3 parts Monster as a base and change amounts to taste.
Gold Rum
Gold Rum or Amber Rum is a Rum aged in a wooden cask that gives it it's characteristic colour and sweetness and rich flavour.
Note that all Rums are born white or light, or rather colourless, it's in the ageing process that they gain their character and colour. Amber Rum is aged in Wooden/Oak Casks while Dark Rum is aged in Charred Oak wood Casks.
