Mix Armagnac, Sake, Japanese shiso leaves, jasminm syrup in a cocktail shaker with ice. Strain the mixture into a rocks glass over ice. Top with ginger beer. Garnish with mint leaves. (Cocktail created by Cocktail Times Master Mixologist, Junior Merino)

  • Armagnac

    Armagnac is a Brandy, like Cognac it's specific to a region of France, the Armagnac region of Gascony. It is distilled from wine made from a blend of grapes including Baco 22A, Colombard, Folle Blanch and Ugni Blanc, While Cognac is distilled from Ugni Blanc. Armagnac is distilled using Column Stills unlike Cognac which uses Pot Stills. The resulting spirit is aged in oak barrels before release.

    Production is overseen by the Institut national de l'origine et de la qualité (INAO) and the Bureau National Interprofessionel de l'Armagnac (BNIA).

    Armagnac is distilled once and ends up with a 52% alcohol content, and a more fragrant and flavourful spirit than Cognac. Armagnac is produced in small scale by small distillers and is considered as a vintage spirit and the Hors d'âge is an Armagnac that has been aged for at least 10 years. For an Armagnac, the older the better and vintage Armagnac are collectibles.

  • Sake

    Sake is a traditional rice wine from Japan, although it's more a beer than a wine. It is made by fermenting rice that has been polished to remove the bran. The difference being in beer and in most East Asian rice wines, starch is first converted to sugar which is then fermented to alcohol, where as in wine, alcohol is produced by fermenting sugar that is naturally present in fruits, like grapes. But there is a difference in the brewing process of beer and sake despite the similar starch to alcohol process. that is, unlike beer where start to sugar and sugar to alcohol are created in two distinct steps, sake is produced in one single fermentation process.

    Sake is the national beverage of Japan and is served in special ceremonies, gently warmed and served in small porcelain cups called sakazuki. Sake uses K?ji-kin or Aspergillus Oryzae spores, instead of Yeast for the fermentation, koji-kin and yeast both are eukaryotic, single-celled microorganisms from the fungus family.

  • Ginger Beer

    Ginger Beer like Ginger Ale is a carbonated non-alcoholic beverage that is produced by the natural fermentation of prepared ginger spice, yeast and sugar. Ginger Beer has a stronger flavour and often uses real ginger while Ginger Ale uses ginger syrup.

    Ginger beer started with spice trade with the orient and probably was an Oriental import since ginger fermented beer has been in use as medicine in China and India since 500 BC.

    Ginger Beer is regulated to 2% alcohol if any alcohol is present at all.
